Spreads

A spread is used to soften the composition of the bread, lubricate and aid digestion, and to add flavour. A spread should complement the main filling and enhance its flavour without overpowering it.

Common forms of base spreads for sandwiches include:

  • Butter
  • Margarines
  • Mayonnaise
  • Cream cheese
  • Goats cheese
  • Mascarpone

Other spreads include:

  • Pate – duck liver, chicken liver
  • Guacamole – avocado
  • Hummus – chickpeas
  • Baba Ghanoush – eggplant
  • Pickles and relishes – tomatoes, onions, vegetables
  • Tapenade – olive , tomato
  • A wide variety of mustards – hot, Dijon, French, Grainy
  • Horseradish
  • Sour cream
