A spread is used to soften the composition of the bread, lubricate and aid digestion, and to add flavour. A spread should complement the main filling and enhance its flavour without overpowering it.
Common forms of base spreads for sandwiches include:
- Butter
- Margarines
- Mayonnaise
- Cream cheese
- Goats cheese
- Mascarpone
Other spreads include:
- Pate – duck liver, chicken liver
- Guacamole – avocado
- Hummus – chickpeas
- Baba Ghanoush – eggplant
- Pickles and relishes – tomatoes, onions, vegetables
- Tapenade – olive , tomato
- A wide variety of mustards – hot, Dijon, French, Grainy
- Horseradish
